Are Seed Oils Actually Bad for You?
Viral claims say seed oils cause inflammation and disease. Here is what the largest human studies on linoleic acid actually found.

If you have spent any time on social media in the last couple of years, you have probably seen the claim: seed oils like canola, soybean, sunflower, and corn oil are quietly poisoning the food supply, driving chronic inflammation, and fueling everything from heart disease to obesity. The theory sounds plausible — these oils are heavily processed and rich in omega-6 fat, and omega-6 gets blamed for tipping the body into a pro-inflammatory state. But when you look at the largest human studies on linoleic acid, the main omega-6 fat in seed oils, the picture is very different from the one going viral.
Where the Seed Oil Panic Comes From
The biochemistry behind the viral claim is real, as far as it goes. Linoleic acid, an omega-6 polyunsaturated fat, can be converted in the body into arachidonic acid, which is a building block for eicosanoids — signaling molecules that include some pro-inflammatory prostaglandins and thromboxanes. Omega-3 fats feed a separate pathway that tends to produce more anti-inflammatory mediators. Modern diets do contain a lot more omega-6 than the diets our ancestors likely ate, and some estimates put the ratio at 15:1 or higher versus a historical ratio closer to 1:1. From there it is easy to build a scary-sounding story: more omega-6 in, more inflammation out. The problem is that this chain of logic has been tested directly, repeatedly, in large groups of real people — and it mostly does not hold up.
What the Largest Studies Actually Found
A 2014 meta-analysis in Circulation pooled 13 prospective cohort studies covering more than 310,000 people and over 12,000 coronary heart disease events. Comparing the highest to the lowest linoleic acid intake, the researchers found a 15% lower risk of coronary heart disease events and a 21% lower risk of coronary heart disease deaths, with the benefit increasing as linoleic acid replaced saturated fat (Farvid et al., 2014).
A 2019 pooled analysis went a step further by measuring actual linoleic acid levels in blood and tissue, rather than relying on self-reported diet. Across 30 cohort studies in 13 countries, with nearly 69,000 participants, higher circulating linoleic acid was associated with a lower risk of major cardiovascular events and lower cardiovascular mortality, not a higher one (Marklund et al., 2019). If seed oils were quietly driving inflammation-fueled heart disease the way the viral claim suggests, these large, independent, internationally replicated datasets are exactly where you would expect to see it show up. Instead, they point the other way.
Why the Ratio Theory Runs Into Trouble
Part of why the omega-6-to-omega-3 ratio argument is weaker than it sounds is basic physiology: the conversion of linoleic acid into arachidonic acid is tightly regulated by a rate-limiting enzyme, so eating more linoleic acid does not translate into a proportional rise in arachidonic acid or downstream inflammatory signaling. Trials that directly measure inflammatory blood markers such as CRP and IL-6 in people eating higher-linoleic-acid diets generally find neutral results, and some find slightly lower inflammation, not more. That does not mean every concern about seed oils is unfounded. Reused, repeatedly overheated frying oil does form oxidation byproducts that are worth avoiding, and seed oils show up constantly in ultra-processed snacks and fast food, where the bigger issue may be the overall food pattern rather than the oil itself. That is a legitimate, more nuanced critique — it is just a different claim than the one saying the oil in your kitchen bottle is inherently toxic.
What You Can Actually Apply

- Watch the heat and the reuse, not just the label. Repeatedly overheating or reusing frying oil generates oxidation byproducts worth avoiding; use fresh oil for high-heat cooking and save delicate oils for lower temperatures.
- Focus on the whole plate, not one ingredient. Seed oils tend to show up alongside ultra-processed snacks and fried food, so the bigger lever is the overall pattern of what you eat, not swapping one cooking oil for another.
